She's in her 80s and yet insists on going miles to her fishmonger for the ingredients for her legendary (and I mean legendary) fish soup, when there's any number of supermarkets just round the corner. She has a real relationship with the shop and discusses what's good and what's not. She also knows the essential nature of a good stock! I can vouch for Fay’s dedication to quality ingredients.
